Christmas Cookie Week Day 6 - Acorn Cookies

Almost nearing the end of the cookie week, which means two things...
1. It's almost Christmas!
2. You've been on a sugar high for the past 4 days. Don't worry that feeling goes away...eventually.

Now, this next recipe is a little more work so I suggest setting aside a good amount of time because no special little elves will come into your kitchen at night to finish what you started, no matter how hard you wish. Sigh.

That being said, this recipe is delicious. I LOVE almond extract in cookies, it has such a distinct flavor that just screams (in a most harmonious way) holiday season.  They are called acorn cookies because you are suppose to use an acorn cookie cutter. But pffft, I opted for a more holiday look... Read on. 
 Quite a few ingredients this time... Milk, flour, vanilla extract, sugar, butter, baking powder, almond extract, pecans, and egg. (Not pictured: Chocolate chips)
 You ready for it?
 Oh butter-sugar mix. We meet again. 
 Crack that egg!
 Add milk.
 Pour in the vanilla and almond extract.
 Right about now it'll start to resemble curds... don't freak it'll all work out.
 Flour and baking powder in a bowl.
 SLOWLY add the flour mix to the bowl. You don't want that going everywhere. Seriously.
 Yum! Now remove from mixer and split the mix in half. Then refrigerate for 4 hours.  See what I mean by setting aside time?
 Then take out one half and roll it out! Now if you are a forgetful poor college student clean a tall skinny glass and use that as a rolling pin. If not, lucky you.  Now you can switch back and forth between the two halves.  The main idea here is allowing the dough to be cool enough so it doesn't become a hassle to work with... you'll know when you reach that point.
 Now for the cookie cutting! Stars

 And snowmen! Oh my!
 Aww! Place on an ungreased baking sheet.
 All done baking! So delicious. But wait there's more!
 Pipe some chocolate onto those cookies! Yes all of them. 
 Grab a family member to help you. You'll need help.
 Get creative with it!
Then top with some crushed pecans! Then just wait overnight for the chocolate to harden and then feel free to share! Or eat them all.... I won't judge.
